Indian Style Pasta

Pasta can be made in various styles. My husband loves pasta in Indian style and so he insisted me last night to make this desi-style pasta. Its simple, healthy and takes only 10-15 min to cook.

Ingredients:
  • Penne Pasta Whole Grain - 6 oz (I use this: Barilla-Whole Grain)
  • 1 Onion, finely chopped
  • 1 Tomato, puree
  • 1 Carrot, chopped and boiled
  • Beans - 10 to 15, french cut and boiled
  • 1 Green Bell pepper, chopped
  • 1 tbsp Ginger-garlic paste 
  • 1 tbsp Chilli powder 
  • 1 tbsp Coriander powder 
  • 1/2 tsp Turmeric powder 
  • pinch of Salt
  • 1 tbsp Oregano leaves
  • 1 tbsp Parmesan cheese 
  • 1 tbsp Oil 
Method:
  •  Cook pasta as per the instructions on the package.
  •  Heat oil in a pan and fry onions till golden brown. Add ginger garlic and fry till its cooked. Then add capsicum and saute for 2-3 mins.
  • Add boiled carrots and beans and saute for a minute.
  • Add dry powders, salt and the tomato puree. Cook this mixture for few minutes.
  • Now add the boiled pasta to this mixture and mix well.
  • Add some oregano leaves and parmesan cheese and cook the pasta on medium flame for 4-5 min.
  • Pasta is ready to serve.
