I had Egg Masala at a friends place the other day and really loved it. I knew my hubby would also love this recipe so I made it for dinner last night. It takes the same time as Egg Curry and tastes as delicious as the egg curry. I added more spices as I know hubby dear loves spicy food.
The best part is if he finds any food mild he will add some green chillies on side. So now a days I try to add green chillies to some recipes. No doubt the food gets hot but it also gives an additional flavor to the food.

Ingredients:
- 4-5 Eggs, Boiled
- 2 medium onions, finely chopped
- 1 medium tomato, puree
- 1 tsp green chili paste
- 1 tsp ginger garlic paste
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tbsp red chilli powder
- 1/2 tbsp garam masala powder
- 1/2 tbsp coriander powder
- 1/4 cup coriander, chopped
- 2-3 dried red chilli
- pinch of Salt
- pinch of asafoetida
- 1 tbsp Oil
Method:
- Boiled the eggs. Peel the cover and slit them using sharp knife. Keep them aside.
- Heat a pan and add oil.
- Once the oil is hot then add cumin seeds and asafoetida. As soon as the cumin seeds crackle add the green chilli and ginger-garlic paste. Fry it for a minute and then add the finely chopped onions.
- Fry the onions till they are golden brown.
- Add the tomato puree along with red chilli powder, coriander powder, turmeric powder, garam masala powder and salt.
- Add little water.
- Let this mixture cook on low heat till the oil separates on the sides of pan and you get a thick gravy.
- You can put a lid while cooking this mixture so the steam generated helps the mixture from sticking to the pan.
- Now add the boiled eggs to this mixture.
- Mix it well and so that the eggs get well coated with the masala.
- Let it simmer for couple of minutes.
- Egg Masala is ready. Garnish it with finely chopped coriander.
- Serve this Egg Masala with rotis or parathas.
