Pasta can be made in various styles. My husband loves pasta in Indian style and so he insisted me last night to make this desi-style pasta. Its simple, healthy and takes only 10-15 min to cook.
- Penne Pasta Whole Grain - 6 oz (I use this: Barilla-Whole Grain)
- 1 Onion, finely chopped
- 1 Tomato, puree
- 1 Carrot, chopped and boiled
- Beans - 10 to 15, french cut and boiled
- 1 Green Bell pepper, chopped
- 1 tbsp Ginger-garlic paste
- 1 tbsp Chilli powder
- 1 tbsp Coriander powder
- 1/2 tsp Turmeric powder
- pinch of Salt
- 1 tbsp Oregano leaves
- 1 tbsp Parmesan cheese
- 1 tbsp Oil
- Cook pasta as per the instructions on the package.
- Heat oil in a pan and fry onions till golden brown. Add ginger garlic and fry till its cooked. Then add capsicum and saute for 2-3 mins.
- Add boiled carrots and beans and saute for a minute.
- Add dry powders, salt and the tomato puree. Cook this mixture for few minutes.
- Now add the boiled pasta to this mixture and mix well.
- Add some oregano leaves and parmesan cheese and cook the pasta on medium flame for 4-5 min.
- Pasta is ready to serve.
