Last night I cooked complete meal. sabji, roti, dal and chawal...In sabji, I made mix vegetable sabji. Mix vegetable gravy sabji can be made in various ways. I am pretty sure everyone has their own style of making it... I too vary this recipe per the ingredients at home. My last night recipe was with no onion and garlic and it still turned out pretty good.

- 1 cup paneer, cubes
- 1/2 cup cauliflower, florets
- 1/4 cup peas
- 1/4 cup carrots, diced
- 1 tomato, puree
- 1 tomato, chopped
- 1/2 tbsp red chilli powder
- 1/4 tsp turmeric powder
- 1/2 tbsp garam masala
- 1/4 cup coriander, chopped
- 1 tsp cumin seeds
- pinch of asafoetida
- pinch of salt
- 1 tbsp Oil
- 1/4 cup coconut
- 1" ginger
- 2-3 green chillies
- Grind all the ingredients to a smooth paste mentioned under "To grind". Add little water as required while grinding and set aside.
- Wash all the veggies and keep on side.
- In a pan, heat oil. Add pinch of asafoetida and cumin seeds. When the seeds crackle add the coconut paste. Saute it for a few minutes and then add tomato puree followed by red chilli powder, turmeric powder, garam masala and salt.
- Cook this mixture on low flame till the oil separates. Keep stirring in between to prevent it from sticking at the bottom.
- Now add all the veggies and 1 cup of water and cook it covered with a lid. When the veggies are half cooked add chopped tomato and paneer.
- Mix it well and cook on low flame till the tomatoes are soft and mushy.
- Mix vegetable is ready. Garnish with coriander.
- Serve with roti or paratha.
