Palak Corn Pulao / Spinach Corn Rice

I like to experiment rice dishes as I love pulao and biryanis. Last night I made Palak Corn Pulao. It is one of the nutritious and flavorful dish by itself and makes a good meal option.

Palak Corn Pulao
Ingredients:
  • 1 cup basmati rice,washed
  • 1 bunch of spinach, washed and chopped
  • 1/2 cup corn kernels, washed
  • 1 tomato, finely chopped
  • 1 onion, finely chopped
  • 1/2 tbsp cumin seeds
  • pinch of salt
  • 1 tbsp oil
Masala (to grind):
  • 1/4 cup of grated coconut
  • 1 cup of coriander leaves
  • 1" ginger
  • 2-3 garlic cloves
  • 1 tsp of red chilli powder
  • 1 tsp of garam masala
 Method: 
  • Grind the Masala(to grind) with little water into a smooth paste. Keep aside.
  • Heat oil in a pan. As soon as th oil is heated add sliced onions.
  • Fry till they are golden brown. Now add chopped tomatoes, spinach and corn kernels.
  • Mix well. Let it simmer for few minutes. 
  • Now add the grinded masala which was kept on side. Cook this entire mixture till tomatoes and corn kernels are soft and mushy.
  • Now add 2 cups of water. Add washed rice to this mixture.
  • Cook till the rice grain is soft and tender and can be easily separated.
  • Palak Corn Pulao is ready to serve.
  • Serve with raita, chutney or any gravy you like.
