When I was a kid I really did not enjoy eating cabbage. It was one of those vegetables I used to bring back home when mom used to give us in the tiffin. But now its a totally different story...I eat most of the vegetables and I wonder why I really did not liked this particular vegetable when I was small... Today I made a very simple recipe of cabbage and it tastes really good. It goes well with rice and dal or even with rotis.

Cabbage Sabji |
Ingredients:
- 1/2 Cabbage, finely sliced
- 2 carrots, chopped
- 1 small tomato, finely chopped
- 1 tsp mustard seeds
- 1 tbsp red chilli powder
- 1/2 tbsp turmeric powder
- 4-5 curry leaves
- 1/2 cup of coriander, chopped
- pinch of asafoetida
- pinch of salt
- Oil
Method:
- Finely sliced the cabbage. Wash it and keep aside.
- Heat oil in a pan. Add mustard seeds, asafoetida, and curry leaves. As soon as the mustard seeds pops up add the red chilli and turmeric powder.
- Saute it for few seconds and now add the finely sliced cabbage. and carrots
- Add pinch of salt. Saute this mixture and cover it with a lid. Let it cook for 5 to 6 minutes on low flame.
- Now add the chopped tomato when cabbage is half cooked. Mix it well. Cook this mixture again for 4 to 5 minutes till the cabbage and tomato is well cooked and all the moisture dries up.
- Garnish with chopped coriander.
- You can also garnish with coconut (optional).
- Cabbage is ready to serve.
