Cabbage

When I was a kid I really did not enjoy eating cabbage. It was one of those vegetables I used to bring back home when mom used to give us in the tiffin. But now its a totally different story...I eat most of the vegetables and I wonder why I really did not liked this particular vegetable when I was small... Today I made a very simple recipe of cabbage and it tastes really good. It goes well with rice and dal or even with rotis.
Cabbage Sabji


Ingredients:
  • 1/2 Cabbage, finely sliced
  • 2 carrots, chopped
  • 1 small tomato, finely chopped
  • 1 tsp mustard seeds
  • 1 tbsp red chilli powder
  • 1/2 tbsp turmeric powder
  • 4-5 curry leaves
  • 1/2 cup of coriander, chopped
  • pinch of asafoetida
  • pinch of salt
  • Oil
Method:
  • Finely sliced the cabbage. Wash it and keep aside.
  • Heat oil in a pan. Add mustard seeds, asafoetida, and curry leaves. As soon as the mustard seeds pops up add the red chilli and turmeric powder. 
  • Saute it for few seconds and now add the finely sliced cabbage. and carrots
  • Add pinch of salt. Saute this mixture and cover it with a lid. Let it cook for 5 to 6 minutes on low flame.
  • Now add the chopped tomato when cabbage is half cooked. Mix it well. Cook this mixture again for 4 to 5 minutes till the cabbage and tomato is well cooked and all the moisture dries up.
  • Garnish with chopped coriander. 
  • You can also garnish with coconut (optional).
  • Cabbage is ready to serve.
