Cucumber Salad


I was tired today and wanted to cook something quick yet healthy. I made rice with lentils (recipe forthcoming) and wanted to make something on side that will go well with the rice.
So I decided to make the cucumber salad. I love this salad as it does not have any yogurt :) and takes only couple of min.



Ingredients:
  • 2 Cucumbers big, finely chopped or grated
  • 1 tbsp peanut powder
  • 1/4 tsp  mustard seeds
  • 2-3 curry leaves
  • 2 green chillies
  • 1 tsp oil
  • pinch of salt
Method:
  • Finely chop or grate the cucumbers in a bowl. Add the peanut powder and mix well.
  • In a small pan, heat oil and add mustard seeds, curry leaves and green chillies.
  • As the mustard seeds sputter pour this on the cucumber - peanut mixture.
  • Mix well. Add salt when ready to serve.
I did not have any coriander. But do garnish your salad with coriander. Serve this salad with lentil-rice or pulav.
