Ragi Uttapam

Ragi Uttapam are quick to make and serves as a healthy breakfast/snack option. Ragi or Millet flour is a good source of calcium,vitamins and minerals. It is also a so called "natural protein".
Ragi Uttapam

Ingredients:
  • 1 cup Ragi Flour
  • 1/4 cup Rice Flour
  • 1/4 cup yogurt
  • 1/2 cup onion, finely chopped
  • 2-3 green chillies, finely chopped
  • 1/4 cup coriander, finely chopped
  • pinch of Salt
  • Water as required
  • Oil for frying
Tempering
  • 1 tbsp Oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 3-4 curry leaves
  • pinch of Aasafoetida
Method:
  • Combine ragi flour, rice flour and yogurt and mix well. 
  • Add finely chopped onions, green chillies, salt and coriander to the above mixture along with some water. Mix well. Make sure the batter consistency is similar  to our uttapam batter.
  • Keep aside to ferment for an hour or two.
  • In a small pan, heat oil for tempering. Add  pinch of asafoetida, mustard seeds and curry curry leaves. When the seeds crackle pour this tempering on the fermented batter.
  • Mix well until it is all combined.
  • Heat a pan and grease it lightly with 1/2 tsp of Oil. Pour a ladleful of batter and spread to make a uttapam. Cook both sides of the uttapam until golden and crisp.  
  • Ragi Uttapam is ready to serve. Serve with hot sauce or chutney.
