Ragi Uttapam are quick to make and serves as a healthy breakfast/snack option. Ragi or Millet flour is a good source of calcium,vitamins and minerals. It is also a so called "natural protein".

Ingredients:
- 1 cup Ragi Flour
- 1/4 cup Rice Flour
- 1/4 cup yogurt
- 1/2 cup onion, finely chopped
- 2-3 green chillies, finely chopped
- 1/4 cup coriander, finely chopped
- pinch of Salt
- Water as required
- Oil for frying
- 1 tbsp Oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 3-4 curry leaves
- pinch of Aasafoetida
- Combine ragi flour, rice flour and yogurt and mix well.
- Add finely chopped onions, green chillies, salt and coriander to the above mixture along with some water. Mix well. Make sure the batter consistency is similar to our uttapam batter.
- Keep aside to ferment for an hour or two.
- In a small pan, heat oil for tempering. Add pinch of asafoetida, mustard seeds and curry curry leaves. When the seeds crackle pour this tempering on the fermented batter.
- Mix well until it is all combined.
- Heat a pan and grease it lightly with 1/2 tsp of Oil. Pour a ladleful of batter and spread to make a uttapam. Cook both sides of the uttapam until golden and crisp.
- Ragi Uttapam is ready to serve. Serve with hot sauce or chutney.
