Delicious and easy to prepare Egg Curry is everyone's favorite at home. This is one of my favorite dinner recipe for winter :) It goes well with both roti and rice...and is also one of the healthy option for kids food.
Egg Curry |
- 4-5 Eggs, Boiled and Peeled
- 1 Onion, puree
- 1/2 Tomato, puree
- 1 tbsp ginger garlic chilli paste
- 1 tbsp yogurt (optional)
- 1/2 tbsp Red chilli powder
- 1/2 tbsp Kala Masala
- 1/4 tsp turmeric powder
- 1/4 cup coriander
- pinch of Salt
- 1 tbsp Oil
Method:
- Boil and Peel 4 eggs. Cut the eggs in two pieces and keep aside.
- Heat oil in a pan. Add onion puree to the hot oil and cook till golden brown. Now add the ginger grlic chilli paste and fry for a minute.
- Add the red chilli powder, cumin powder and turmeric powder. Mix well.
- Add the tomato puree and cook it till the oil is separated. Keep stirring in between to avoid the mixture sticking at the bottom.
- Now add yogurt and mix it well. Yogurt is optional, we love thick gravies and so I prefer to add yogurt :)
- Add the eggs and mix gently so that they get well coated with the spices.
- Add water depending on the consistency of the gravy and cook it for couple of minutes.
- Garnish with coriander before serving.
- Serve with rice or roti.
