Egg Curry

Delicious and easy to prepare Egg Curry is everyone's favorite at home. This is one of my favorite dinner recipe for winter :) It goes well with both roti and rice...and is also one of the healthy option for kids food. 
Egg Curry
Ingredients:
  • 4-5 Eggs, Boiled and Peeled
  • 1 Onion, puree
  • 1/2 Tomato, puree
  • 1 tbsp ginger garlic chilli paste
  • 1 tbsp yogurt (optional)
  • 1/2 tbsp Red chilli powder
  • 1/2 tbsp Kala Masala
  • 1/4 tsp turmeric powder
  • 1/4 cup coriander
  • pinch of Salt
  • 1 tbsp Oil

Method:
  • Boil and Peel 4 eggs. Cut the eggs in two pieces and keep aside.
  • Heat oil in a pan. Add onion puree to the hot oil and cook till golden brown. Now add the ginger grlic chilli paste and fry for a minute.
  • Add the red chilli powder, cumin powder and turmeric powder. Mix well.
  • Add the tomato puree and cook it till the oil is separated. Keep stirring in between to avoid the mixture sticking at the bottom.
  • Now add yogurt and mix it well. Yogurt is optional, we love thick gravies and so I prefer to add yogurt :)
  • Add the eggs and mix gently so that they get well coated with the spices.
  • Add water depending on the consistency of the gravy and cook it for couple of minutes.
  • Garnish with coriander before serving.
  • Serve with rice or roti.
