I wanted to try something new something different today and looking at the veggies I have, I decided to make a cabbage beet salad. It turned out pretty good and was quite refreshing, soothing to the tummy side dish for a summer night.
Cabbage Beet Salad |
Ingredients:
- 1 cup cabbage, grated
- 1 cup beetroot, grated
- 2 cups yogurt
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 3-4 curry leaves
- pinch of asafoetida
- pinch of sugar
- pinch of salt
- 1/4 cup coriander
- 1/2 tbsp oil
- Peel the beetroot skin an grate the beetroot. Grate the cabbage and keep them aside.
- In a bowl add yogurt, salt and sugar. Beat it until smooth.
- In a pan add oil. As soon as the oil is heated add the mustard seeds, cumin seeds, asafoetida and curry leaves.
- When the seeds crackle add the grated cabbage and beetroot. Mix well and stir fry for couple of minutes till the water gets evaporated.
- Add this mixture to the beaten yogurt. Mix well.
- Garnish with coriander before you serve.
