Cabbage Beetroot Salad

I wanted to try something new something different today and looking at the veggies I have, I decided to make a cabbage beet salad. It turned out pretty good and was quite refreshing, soothing to the tummy side dish for a summer night.
Cabbage Beet Salad

Ingredients:
  • 1 cup cabbage, grated
  • 1 cup beetroot, grated
  • 2 cups yogurt
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 3-4 curry leaves
  • pinch of asafoetida
  • pinch of sugar
  • pinch of salt
  • 1/4 cup coriander
  • 1/2 tbsp oil
Method:
  • Peel the beetroot skin an grate the beetroot. Grate the cabbage and keep them aside.
  • In a bowl add yogurt, salt and sugar. Beat it until smooth.
  • In a pan add oil. As soon as the oil is heated add the mustard seeds, cumin seeds, asafoetida and curry leaves.
  • When the seeds crackle add the grated cabbage and beetroot. Mix well and stir fry for couple of minutes till the water gets evaporated.
  • Add this mixture to the beaten yogurt. Mix well.
  • Garnish with coriander before you serve.
