I usually prepare carrot salad but this time I decided to make a dish which will go well with roti or as a side dish with dal-chawal. Gajar Matarchi Bhaji is an easy and healthy dish which can be prepared quickly. If you love colorful veggies then you will definitely love this...My mom chopped the carrots and make this but as I already had the grated carrots I used them instead of chopped carrot pieces...Both tastes yummy!
The sweetness of carrots, crunchiness of peanuts and spiciness from the green chillies makes it a very flavorful dish. When making this dish for kids make sure you add only one chilly so that it doesn't become spicy for them. Not all kids like spicy food.
Carrot Peas Sabji |
- 2-4 carrots, grated
- 1/4 cup peas, boiled
- 2-3 green chillies, finely chopped
- 1 tsp mustard seeds
- 1/4 tsp turmeric powder
- pinch of asafoetida
- pinch of salt
- 1/4 cup coriander, finely chopped
- 1 tbsp peanut powder
- 1 tbsp oil
- Grate the carrots and keep aside.
- Add oil in a pan. When the oil is heated add asafoetida, mustard seeds, chopped green chillies and turmeric powder.
- When the mustard seeds crackle add the grated carrots and peas. Mix well.
- Cover the pan with some water on the lid. Cook the carrots on low flame for 5 to 6 minutes.
- Now add pinch of salt and peanut powder. Mix well and cook again for 1 to 2 minutes.
- Garnish with coriander before serving.
- Serve with roti.
