Methichi Bhaji

Methi also known as Fenugreek leaves is very popular in India. It is bitter in taste and has lot of medicinal properties but when cooked with right ingredients it taste delicious. It is one one my favorite veggie among the green leafy vegetables and I can eat it everyday :) I am sharing below one of my mom's quick and easy recipe which uses peanuts to enhance the flavor of methi and make it super delicious.
Methichi Bhaji
 Ingredients: 
  • 1 bunch of Methi leaves 
  • 1/2 tsp turmeric powder
  • 3-4 green chillies, finely chopped
  • 1-2 garlic, grated
  • pinch of Salt
  • pinch of Asafoetida
  • 1 tbsp roasted peanut powder (optional)
  • 1 tbsp Oil
Method: 
  • Clean the methi leaves. Wash thoroughly under running water. After straining the water chop the leaves and keep aside.
  • Heat oil in a pan. Add pinch of asafoetida followed by grated garlic. 
  • Add the finely chopped green chillies. Saute it till the garlic is golden brown.
  • Now add the chopped methi, salt and turmeric powder. Mix well.
  • Add 1/2 cup of water and cook the methi for 8-10 minutes on low flame. When the methi is 80% cooked add the peanut powder. This is optional. (If not adding peanut powder let the methi cook and all the water get evaporated)
  • Cook again for 2-3 minutes. The water by now will be all evaporated.
  • Serve with roti or bhakari.
