This is the recipe I make all the time when my husband wants to eat paneer and I have no time to prepare any royal paneer dish ...I don't want to disappoint him and at the same time cook something delicious with not spending too much time in kitchen...then this paneer bhurji comes in handy!

Paneer Bhurji |
- 2 cups Paneer, grated
- 1 cup Peas, boiled
- 1 medium onion, finely chopped
- 1 small tomato, finely chopped
- 1 tbsp ginger garlic paste
- 1-2 green chillies, finely chopped
- 1 tbsp red chilli powder
- 1 tbsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp turmeric powder
- 1 bay leaf (tajpat)
- 1/2 inch of cinnamon stick (dalcheene)
- pinch of salt
- pinch of asafoetida
- 1 tsp cumin seeds
- 1 tbsp oil
- 1/4 cup coriander
Method:
- Heat oil in a pan. As soon as the oil is heated add bay leaf,cinnamon stick,cumin seeds and asafoetida.
- Add chopped onion when the cumin seeds sputter.
- Fry till onions turn golden brown.
- Add ginger garlic paste and green chillies. Saute for 1-2 min.
- Now add the chopped tomato, turmeric, coriander-cumin powder and red chilli powder.
- Cook this mixture till the oil seperates.
- Add salt and the boiled peas to this mixture. Cook for 1-2 min.
- Now add the grated paneer. Stir well and mix cook this mixture on low flame for 7-8 min.
- Stir in between as required.
- Garnish with coriander leaves.
- Paneer bhurji is ready to serve.
- Serve with rotis or any indian bread.
