Fodniche Batate meaning potatoes with seasoning. This is a dry vegetable and is very popular food among Kid's Lunch Box. I remember back in school every other day there would be someone in our class getting this vegetable in their tiffin. Another quick and easy recipe. Dry Potatoes can be made in various ways. This is just one of the way I made it today.
Ingredients:

- 2 medium potatoes, sliced
- 4-5 curry leaves
- 1 tsp mustard seeds
- 1/2 tsp turmeric powder
- 1 tbsp red chilli powder
- 1/2 tbsp garam masala powder
- 1/4 cup of coriander, finely chopped
- pinch of asafoetida
- pinch of salt
- 1 tbsp Oil
- Wash and Peeled the potatoes. Slices them in small pieces and keep aside.
- Heat Oil in a pan. Add curry leaves, asafoetida and mustard seeds to the hot oil.
- As soon as the seeds pop up add the finely sliced potatoes. Now add all the powders and salt.
- Mix well. Cover the pan with a lid. Make sure you put some water on the lid so that the nice steam gets created in the pan to cook the potatoes.
- Let the potatoes cook for 8-10 minutes on low flame. Keep stirring so that they don't stick to the pan.
- Garnish with coriander leaves before serving.
- Potato sabji is ready to serve.
