Pav Bhaji is a very popular mumbai street food. It's an all time favorite at home and I often cook it when we have some guests come over. Pav bhaji consists of an indian bread served with mashed veggies cooked along with indian spices. Recently, during my daughter's bor nahn I had cooked pav bhaji as one of the items in the lunch menu and let me tell you as usual it was a big hit.

- 3 medium Potatoes
- 1 cup Peas
- 1 Green Pepper, Finely Chopped
- 1 Onion, Finely Chopped
- 2 Tomatoes, Finely Chopped
- 1 cup carrots
- 1 tbsp Garlic Paste
- 1 tbsp Red Chilli Powder
- 1 tbsp PavBhaji Masala
- 1/2 tsp Turmeric powder
- 1 cup of Coriander, Finely Chopped
- pinch of Salt
- pinch of asafoetida
- 1 tbsp Oil
- 2 tbsp Butter
- Pav (Buns) 6-8 pieces
Method:

- In a pressure cooker add potatoes, peas and carrots and a cup of water. Take 3-4 whistles and boil the veggies.
- Let it cool down and then mash this mixture and keep aside.
- Heat oil in a pan. Fry the chopped onions till golden brown. Add garlic paste and fry for a minute. Add chopped green pepper also known as capsicum followed by chopped tomatoes and cook till they become soft.
- Now add the turmeric powder, red chilli and pav bhaji masala and salt. Saute for a minute.
- Add the mashed veggies and mix well .
- Add little water such that the bhaji is not too thin or too thick.
- Cook this mixture on low flame for for 5-6 minutes covered by a lid.
- Pav Bhaji is ready to serve.
- Garnish it with butter,chopped onions, squeezed lemon juice and coriander leaves.
Bread
- Heat tawa and add some butter on it.
- As the butter starts melting keep the pavs and toast it such that it absorbs the butter.
- Serve hot with the bhaji.
