We just got back from our beautiful vacation at Turks and Caicos. The food over there was really OK and we both were badly craving for home cooked Indian food. As soon as we got back home I did not had a choice but to cook something simple, quick yet delicious. So I decided to make the peanut sabji and khichadi. This is the recipe which my mom inherited from her mom. We actually call it as komad kanda :) I really dont know the literal meaning of this word but it basically translates to peanuts cooked with onion. I love this sabji and as my dear hubby loves peanuts he goes crazy with this dish.

Peanut Sabji |
Ingredients:
- 1 cup ground peanuts
- 2 medium onions, chopped
- 1 tbsp red chilli powder
- 1/2 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 3-4 curry leaves
- 1/4 cup coriander, chopped
- pinch of salt
- pinch of asafoetida
- 1 tbsp oil
Method:
- Ground the peanuts and keep on side.Make sure that the peanuts do not ground to fine powder. Also, you can use roasted peanuts (optional).
- Heat oil in the pan. As soon as the oil gets heated add the cumin and mustard seeds followed by pinch of asafoetida and curry leaves.
- Now add the finely chopped onion. Cook the onions till they are golden brown.
- Now add the ground peanuts, red chilli powder, turmeric powder and salt.
- Stir well. Cover the pan and let this mixture cook for few minutes on low flame.
- Remove the lid and mix the mixture again.
- Garnish it with chopped coriander.
- Peanut sabji is ready to serve.
I love to serve this with rice and lentil khichadi. Nothing can beat the rice and lentil khichadi along with the peanut sabji. It taste so yummie :). Also, adding more onion to this dish makes it more flavorful.
