My
husband loves Egg Biryani. Unlike other biryani's, this one does not
take much time and is very easy to make. It tastes delicious and one can
get significant amount of protein through the eggs in it.

Egg Biryani |
Ingredients:
- 2 cups of Basmati Rice, cooked
- 5-6 boiled eggs, peeled and make long slits along each egg
- 3 large onions, finely sliced (vertically)
- 1 tomato, finely chopped
- 1 cup coriander and mint leaves, finely chopped
- 3/4 cup yogurt
- 2-3green chillies, finely sliced (vertically)
- 1/2 tbsp ginger garlic paste
- 1 tsp cumin seeds
- 1 tbsp red chilli powder
- 1/2 tbsp turmeric powder
- 1 tbsp lemon juice
- 1 1/2 tbsps oil
- pinch of salt
- pinch of asafoetida
- 1 cup of fried onion
Biryani Masala:
- 2-3 Bay leaf
- 1 inch Cinnamon stick
- 4-5 Cloves
- 4-5 Black Peppercorns
- 2 Black Cardmom

Method:
- Cook the basmati rice and keep on side.
- Heat a pan with some oil and add the biryani masala, cumin seeds and asafoetida.
- As
soon as the cumin seeds and the garam masala pops up add the onion and
fry till golden brown. Then add the ginger garlic paste, green chillies
and chopped mint and coriander leaves.
- Add the red chilli powder, turmeric powder.Saute the mixture for a minute.
- Now add the chopped tomatoes and cook.
- Mix the boiled eggs to the above mixture and saute till the eggs get coated with the masala.
- Add the yogurt and cook till the oil seperates.
- The egg masala is ready now. Keep it aside.

- Now it's the time to arrange the layers of egg masala and rice to make this delicious egg biryani.
- Take a bowl and add some rice followed by some egg masala. Squeeze the lemon juice and sprinkle some coriander and mint leaves.
- Now add another layer of rice. Sprinkle fried onions, coriander and mint leaves.
- Cover and simmer on low flame for few minutes.
- Egg Biryani is ready. Mix gently while serving.
- Serve this biryani with your favorite raita.
